Globally, vegetable production is a significant agricultural sector, encompassing crops used for food like roots, bulbs, tuberous vegetables, and certain melons but excluding crops grown for animal feed and those categorized as fruits. Leading the world in this sector is China, with an impressive 749 million metric tons annually. Not only does China dominate in quantity, but it also excels in cultivating technology and the variety of vegetables produced.

India holds the second position, producing 200 million metric tons, which is about a third of China's output. The country's vegetable production is notably concentrated on ginger and okra. Following India, Nigeria contributes 137.8 million metric tons per year, focusing on a diverse array of crops including cassava, yam, maize, rice, and millet, with a total of 30 different types of vegetables cultivated.

The Dominican Republic, though smaller in scale, makes a significant mark by producing 48.2 million metric tons annually and leading in the cultivation of organic cocoa and bananas. The United States ranks fifth with its production of 47.8 million metric tons, primarily focusing on tomatoes, onions, and sweet corn.

Indonesia and Thailand also play major roles in the global vegetable market. Indonesia produces 34.1 million metric tons with a focus on cabbage, chili, potatoes, and tomatoes. Thailand follows closely with 33.4 million metric tons, concentrating on rice, garlic, and sugarcane.

Ghana and Russia contribute similarly significant amounts. Ghana's annual production of 33 million metric tons includes primary crops like tomatoes, onions, shallots, and cucumbers. Russia, producing 31.8 million metric tons, mainly focuses on cucumbers and tomatoes.

Turkey completes the top ten list of global vegetable producers with 31.7 million metric tons, specializing in melons, potatoes, and onions. Other notable vegetable-producing countries include Brazil, Ukraine, Vietnam, Bangladesh, and Mexico, each contributing significantly to the global vegetable market.

  • "Vegetables" includes mostly annual crops used for food, including "roots, bulb and tuberous vegetables" (onions, garlic, and beets), but excludes vegetables grown principally for animal feed. It also includes melons and watermelons but excludes other crops generally categorized as fruits.
  • "Roots and Tubers" includes crops yielding starchy roots, tubers, rhizomes, corms, or stems not included in the general vegetables category and which are used mainly for human food, animal feed, or manufacturing alcohol and fermented beverages including beer. Data excludes crops which are cultivated mainly for animal feed (mangolds, swedes) or for processing into sugar (sugar beets).
